Grianstad an tSamhraidh, meaning “summer solstice,” is the seventh release in Dingle’s Celtic Wheel of the Year series and the second Single Pot Still expression in the lineup. Matured in first-fill bourbon casks and finished in rye casks, it offers a vibrant profile that reflects the brightness of midsummer. The nose presents fruity and lactic notes, including yoghurt, fresh fruit, and delicate spices like nutmeg and cinnamon, with pear, baked apple, peach, and apricot at the forefront. On the palate, spices such as ginger emerge, complemented by coffee candy, malt, rye bread, nuts, liquorice root, chocolate, and sandalwood. The finish is quite long and spicy, with vegetable notes intertwining with coffee, chocolate, wood, liquorice, and nuts.
